A New Nose-to-Tail Niche

A couple months back we wrote about nose-to-tail consumption. The practice — which involves eating as much of an animal as possible, including organs and unpopular cuts — is slowly moving mainstream.

One niche product in particular that’s taking off is beef tallow, or rendered beef fat. In short, tallow is to beef as lard is to pork.
